The Best Vegan S’mores

National S’mores Day is August 10 but there’s no reason you can’t celebrate any day of the year … even if you’re vegan! All you need are three ingredients: Chocolate, marshmallows and graham crackers. But if you want to break from the sitting-around-the-campfire tradition, you can do that, too. Here are a few of my fave ooey gooey chocolatey favorites when you’re in the mood for “some more.”

S’more in glass? Yes, please! This deliciously creamy concoction of banana, cacao powder, cacao nibs, maca, cinnamon, vanilla powder, Thai chili and maple syrup has a nice kick that really hits you after you drink it down. Cold and hot at the same time. Best of all, it’s totally vegan, raw and oh-so delicious.

Three words: O.M.G. Donut Friend in Highland Park is a donut mecca that just so happens to offer the most incredible vegan creations (with rock & roll references) you’ll ever have. Along with the countless “design it yourself” donut options, you gotta try the S’morrissey, a chocolate donut filled with chocolate ganache and marshmallows that’s topped with chocolate glaze, graham cracker crumbs and another toasted marshmallow. Your insulin levels will say no, but your mouth will say don’t stop.

This s’mores recipe takes all of five minutes to make and you can veganize it with dairy-free dark chocolate and gelatin-free marshmallows, which you can find at Whole Foods or natural food stores. If you’re not making these by the campfire, simply break off a piece of chocolate and place it on top of the graham cracker pieces. Melt some fluffy marshmallows on a pan (or over your stovetop flame with a fork) and ta da! Enjoy your s’mores sandwich.
